Having two older sisters able and willing
to cook, I have never had to cook that much. So it can be interesting when I do
cook things. One of my favorite stories was when Wesley (my older brother) and
I wanted pancakes for breakfast. Finding no one who would make them for us, we
decided to try making them on our own. We got out the cookbook and tried our
best. Unfortunately instead of putting in two teaspoons of baking powder we put
in two teaspoons of baking soda. Which gave it a little salty taste but we ate
them all up and were proud that we could make pancakes!! :o)
One
time while visiting my grandparents, I wanted to make cookies. It took me three
hours just to make the batter. Another time while making cookies, I almost put
in yeast instead of baking powder. Emily is the one who always bakes wonderful things for our birthdays. It being
her birthday I wanted to be sweet and offer to bake something for her like
oatmeal bars or something. She immediately said, “No thank you, I’m fine!” I
found out later that she didn't want to go to the hospital on her birthday.
Now please do not think that I can’t cook
at all. It is just that I don’t bake that much and so I make little mistakes
that if I baked more wouldn't happen. I cook for myself everyday and I’m still
alive and healthy! :o)
For your enjoyment I am including my recipe for a homemade quesadilla, Sara style.
The tortilla: One cup
of flour, a third of a cup of water,and a pinch of salt. Mix the dough until you can roll it out easily. Slightly grill tortilla on both sides. While still on grill cover tortilla with a layer of cheese, thin slices of tomatoes, diced sweet peppers, diced onions, (beans, avocado, black olives are other options) and a final layer of more cheese. Sprinkle with a little lemon and Worcestershire sauce and Tabasco sauce (either, or optional according to your taste). Fold in half and grill till both sides are golden brown. Serve with avocado and sour cream. Garnish with chopped tomatoes and celantro (aka, coriander or dhania). By Sara Anne
